BackgroundKefiran is an exopolysaccharide derived from microflora of kefir grains presented in a fermented milk beverage. It has gained researchers' attention due to its biological properties, biocompatibility, film-forming and electrospinning abilities, highlighting its tremendous potential in applications from food packaging to nanomedicine.
